Chicken Rollups in Gravy (author's favorite)
Yield: 6 servings
Ingredients
- 6 chicken breasts, halved skinned and boned
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 6 (1 oz.) slices cooked ham
- 6 (1 oz.) slices Swiss cheese
- all-purpose flour
- 2 Tbs vegetable oil
- 1 1/2 cups chicken broth
- 1 (10 3/4 oz.) can cream of chicken soup, undiluted
- 1 (3 oz.) can sliced mushrooms
- hot cooked rice
Instructions
Place each piece of chicken on waxed paper. Flatten to 1/4 inch thickness using a meat mallet or rolling pin. Sprinkle both sides of chicken with garlic powder, salt and pepper. Place a slice of ham and cheese in center of each piece of chicken. Roll up lengthwise and secure with wooden picks. Dredge in flour. Brown chicken in hot oil. Combine chicken broth, soup and mushrooms. Pour broth mixture over chicken. Bring to boil, cover, reduce heat and simmer 30 minutes. Serve over rice. Yield: 6 servings.
