Shrimp Quiches

Yield: 24 appetizers

Ingredients

  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp dill weed
  • 1/8 tsp cayenne
  • 1/2 cup Swiss cheese, shredded
  • 1 pkg (8 oz.) refrigerated butterflake dinner rolls
  • 3/4 cup (4 oz.) small cooked shrimp
  • 1/2 cup whipping cream or half and half
  • 2 Tbs finely minced green onion

Instructions

Generously grease 2 dozen 1 3/4 inch muffin cups; set aside. Separate rolls into 12 equal pieces. Cut each in half and press each half into bottom and sides of a muffin cup. Divide shrimp evenly among pastry shells. Beat together egg, cream, onion, salt, dill and cayenne until well blended. Divide evenly among shells, using about 2 teaspoons for each. Sprinkle cheese over tops. Bake uncovered at 375 degrees for 20 minutes or until edges are brown and centers appear set. Cool 5 minutes and serve warm or remove from pans and cool completely on racks; package airtight and freeze. To reheat: place frozen quiches on a baking sheet. Bake at 375 degrees for 15 minutes or until heated throughout. Yield: 24 appetizers.
