Roast Prime Rib of Beef (author's favorite)

Instructions

Some cooks have packed the prime rib in salt, covered it with marinade and even enclosed it in a brown bag. Don't try it. I have a sure fire way that keeps the meat tender, pink and moist from start to end. You begin with a 4 pound roast or larger, at room temperature if possible. Put the roast in a roasting pan, fat side up, and place it uncovered in a preheated 375 degree oven for 1 1/4 hours. Turn off the oven and let the roast stand for 5 hours in the oven. Do not open the oven door. Sprinkle with seasoned pepper, seasoned salt and steak seasoning very generously 45 minutes before you want to serve it. Turn oven on to 300 degrees.
