Orange Caramel Rolls
Yield: 9
Ingredients
- 3/4 cup sugar
- 2 Tbs orange juice
- 2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup milk
- 1/2 tsp ground cinnamon
- 3 Tbs butter or margarine
- 1 Tbs finely shredded orange peel
- 1 Tbs baking powder
- 1/3 cup shortening
- 1/4 cup sugar
Instructions
In small saucepan combine 3/4 cup sugar, butter, orange peel and orange juice. Bring to boil over medium heat; cook and stir 1 minute. Set aside 2 tablespoons orange mixture, pour remainder into 8 X 8 X 2 baking pan. Stir together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Make a well in center and add milk all at once, stirring just until dough clings together. Turn dough out onto lightly floured surface. Knead dough gently 15 to 20 strokes. Roll dough into a 12 X 9 inch rectangle. Spread dough with the reserved orange mixture. Mix 1/4 cup sugar and cinnamon; sprinkle over dough. Roll jelly roll style, beginning with the long side. Slice into 9 pieces. Place cut side down atop orange mixture in pan. Bake in 425 degree oven about 20 minutes or until golden. Loosen sides; invert onto serving plate. Serve warm. Yield: 9.
