Monte Cristo Sandwiches (author's favorite)
Yield: 4 sandwiches
Ingredients
- 1/4 cup mayonnaise
- 2 tsp prepared mustard
- 8 slices white bread
- 2 Tbs milk
- 1 cup fine, dry bread crumbs
- vegetable oil
- 2 egg whites
- 3 eggs
- 1/2 cup commercial sour cream
- 4 (1 oz.) slices cooked turkey
- 4 (1 oz.) slices fully cooked ham
- 4 (1 oz.) slices Swiss cheese
Instructions
Combine mayonnaise and mustard, spread on one side of each bread slice. Place one slice of turkey, ham and cheese on top of the 4 bread slices. Top with remaining bread. Cut in half diagonally and secure with wooden toothpicks. Beat egg whites (at room temperature) until stiff; set aside. Beat eggs, add sour cream and milk, mixing well. Fold in egg whites. Dip sandwich halves in batter, coat with bread crumbs. Carefully lower sandwich halves, one at a time, into deep hot oil (375 degrees). Fry until golden brown, turning once. Drain, remove toothpicks and serve immediately. Yield: 4 sandwiches.
