Cider Baked Turkey (author's favorite)
Yield: 12 to 16 servings
Ingredients
- 1 1/2 cups apple cider
- 1/4 cup soy sauce
- 2 Tbs cornstarch
- 1 5-5 1/2 lb turkey breast
- 1/2 cup apple cider
Instructions
Place turkey breast skin side up in a large roasting pan. Bake at 450 degrees for 30 minutes until skin is crisp. Combine 1 1/2 cups apple cider with soy sauce and pour over turkey. Insert meat thermometer in meaty portion of breast making sure it does not touch bone. Cover and bake at 325 degrees about 1 1/2 to 2 hours until meat thermometer registers 185 degrees. Baste turkey frequently with the cider mixture. Combine 1/2 cup cider and cornstarch and mix well; stir into pan drippings. Return to oven and bake uncovered until sauce is thickened. Transfer turkey to platter and serve with sauce. This is very low in calories. Yield: 12 to 16 servings.
